Frugal Recipe: Chicken, Rice, and Green Beans (corrected)

Dinner tonight:  Honey Mustard Chicken, Basmati White Rice and Sauteed Green Beans

Honey Mustard Chicken

Cooking Sauce – for use up to 3 lbs. of chicken breast, cut into bite-sized pieces

½ c.  Napa Valley Organic Olive Oil from Co-op ($.40/oz) = $1.58

½ c. Trader Joes’ Desert Mesquite Honey ($.21/oz) – $.84

¼ c. Trader Joe’s Dijon Mustard ($.13/oz) = $.26

sea salt and pepper to taste

Directions:  Preheat oven to 350 – 375 degrees (according to heat of your oven)

Combine ingredients for cooking sauce in glass or ceramic baking dish.  Place bite-sized pieces of chicken into dish and coat with sauce.  Baste chicken every 15 minutes until golden brown – about 30 – 45 minutes, depending on amount of chicken.

Total cost for cooking sauce – $2.68

Add your cost of chicken, which will vary  – tonight it was 2.45 lb = $7.33

Combine ingredients right into baking dish.
Cut chicken with kitchen scissors - so much easier!
More than enough for a family of 5!

2 c dry Organic White Basmati Rice from Co-op – $1.61/lb = $.81

20 minutes on the stovetop

7 minutes in the pressure cooker

½ bag of Trader Joe’s French Cut Frozen Green Beans – $1.00

splash of olive oil – $.15

Sautee in olive oil on low to medium heat for a few minutes.

 TOTAL cost of dinner tonight for family of 5= $11.97
